I decided to look up some new recipes. I've been trying to incorporate veggies into my dinners. So here are the dishes I came up with.
Salmon w/veggies- Ok so I usually make salmon in the oven. It's quick and easy and no mess or smell. But I got the urge so sauté some veggies with it. So I heated up a little olive oil, some garlic and added green peppers and onions finely chopped. I sautéed them for a while then added the salmon. I sprinkled salt and freshly ground pepper (i've found that with good kosher salt and freshly ground pepper you have all the seasoning you need) on the salmon and slapped it on the pan in the middle of he veggies. (*note* I always remove the skin from the salmon because the scales are messy and stink up the place) after a while i flipped the salmon and added sliced mushrooms to the pan (they cook pretty quickly). And thats it. It came out soooooo deicious. The salmon was perfectly cooked and the veggies came out way better than I thought. In fact I think the veggies were my fave part of the meal!
Apple and Sweet Potato Casserole- Grease a casserole dish. Peel and slice 1 (i used 2 it was too much) sweet potato into thin slices. Peel and slice 2 granny smith apples into thin slices. Layer them in the dish. In a saucepan mix brown sugar, butter, water, raisins, and salt. cook it for like 5 min then poor it over the apples and sweet potatoes top with a few lemon slices and pop it in the oven. Now, this def needs some tweaking. The bottom was moist but the top was dry. Next time I'll use less sweet potatoes and slice everything really thin and make sure all of it is covered with the sugar mixture. But it did come out good. The apples especially. Nice and sweet healthy treat.
Honey Mustard Broccoli It was ok I guess. But 2 things I didn't like. 1. I guess I'm just not a honey mustard person. And the sauce mixture was too watery. maybe if it had been thicker and more caramelized it would have been tastier. Also the broccoli was frozen. So much more convenient, I mean have you ever tried to steam broccoli? Unfortunately it came out practically mush and a really bland color. Its hard to get fresh broccoli to be the right texture. So if I do it again I'll try with fresh broccoli. Fresh bright green veggies are always the best. Same goes for green beans.
oh and I figured Ed would want more than this so I made him some crabcakes I bought from the store.

It was just really fun and exciting to be making new foods and having different flavors on one plate.
man. they all look great! how do you have the time and the patience to do so many parts of your meal. i make a meat and a side...you don't like it, well , deal with it! lol awesome prima.
ReplyDeletelol. its labor intensive. but i think its because i'm trying to time everything right. the last thing i want is for things to be ready and sitting and getting cold while other things cook ya know?
