More foody goodness

Saturday night was fun. :)

I decided to look up some new recipes. I've been trying to incorporate veggies into my dinners. So here are the dishes I came up with.

Salmon w/veggies- Ok so I usually make salmon in the oven. It's quick and easy and no mess or smell. But I got the urge so sauté some veggies with it. So I heated up a little olive oil, some garlic and added green peppers and onions finely chopped. I sautéed them for a while then added the salmon. I sprinkled salt and freshly ground pepper (i've found that with good kosher salt and freshly ground pepper you have all the seasoning you need) on the salmon and slapped it on the pan in the middle of he veggies. (*note* I always remove the skin from the salmon because the scales are messy and stink up the place) after a while i flipped the salmon and added sliced mushrooms to the pan (they cook pretty quickly). And thats it. It came out soooooo deicious. The salmon was perfectly cooked and the veggies came out way better than I thought. In fact I think the veggies were my fave part of the meal!

Apple and Sweet Potato Casserole- Grease a casserole dish. Peel and slice 1 (i used 2 it was too much) sweet potato into thin slices. Peel and slice 2 granny smith apples into thin slices. Layer them in the dish. In a saucepan mix brown sugar, butter, water, raisins, and salt. cook it for like 5 min then poor it over the apples and sweet potatoes top with a few lemon slices and pop it in the oven. Now, this def needs some tweaking. The bottom was moist but the top was dry. Next time I'll use less sweet potatoes and slice everything really thin and make sure all of it is covered with the sugar mixture. But it did come out good. The apples especially. Nice and sweet healthy treat.

Honey Mustard Broccoli It was ok I guess. But 2 things I didn't like. 1. I guess I'm just not a honey mustard person. And the sauce mixture was too watery. maybe if it had been thicker and more caramelized it would have been tastier. Also the broccoli was frozen. So much more convenient, I mean have you ever tried to steam broccoli? Unfortunately it came out practically mush and a really bland color. Its hard to get fresh broccoli to be the right texture. So if I do it again I'll try with fresh broccoli. Fresh bright green veggies are always the best. Same goes for green beans.

oh and I figured Ed would want more than this so I made him some crabcakes I bought from the store.

It was just really fun and exciting to be making new foods and having different flavors on one plate.

anxiety

god i have the worst anxiety. its really kind of crippling. it stops me from doing a lot of things. lots of activities, meeting new people, pursuing goals. i hide away in my apt where its safe. i never go out of my comfort zone. and when i attempt to i get so upset to the point where i'm visibly shaken and on the verge of tears. it really holds me back in life. i think its part of the reason i am the way i am and why i have the life i do.

even if i found out that someone wanted me to be on a tv show or in a movie i would be excited for 5 min and then a title wave of anxiety would wash over me and i would say "forget it. forget it. i don't wanna do it. nevermind."

i mean i get these attacks. i remember being on the T in boston and knowing my stop was coming up next and i would get this anxiety attack. why?? because i might miss it and go too far in the other direction? whats the problem? when i would get called on in school...even in college it would be like i was suffocating. and when i know someone other than friend or family is gonna call (business related, interview, something serious) i get super nervous. and don't get me started on doctor appointments. my stomach starts hurting and its just bad.

i look for excuses anywhere to not do most things. i'm afraid of failure. i'm afraid of success. i'm afraid of anything thats hard or uncomfortable or puts me on the spot.

guess what

It was 10 yrs ago today that I graduated high school.

Food: cookies and more

Ok soo...I've been making things from recipes lately.

The other day I noticed I have some bananas that were going brown and I didn't wanna just toss them. So I went online to look for recipes for ripe bananas. I found one for some healthy banana cookies.

Banana Oatmeal Cookies. The ingredients are simple.

ripe bananas
oil
vanilla extract
oatmeal
raisins
dried apricot

no added sugar. healthy cookies. :)

They came out very soft and they taste JUST like banana bread!! mmmm delicious!!!

I didn't take pictures of them when they were fresh out of the oven. I wrapped them all up individually but here's a pic of one of them.


ok ok now look what else I made last night. This recipe is from Thanksgiving but I got into the habit recently of making it just to have throughout the week. as a side dish, or just as a snack.

Green beans with caramelized onions and toasted sliced almonds. YUMM-O

all you need is

fresh green beans
1 onion (sliced thin)
sliced almonds
olive oil
unsalted butter



here's a little something i made the other day

soy chicken nuggets, asparagus, sweet potato fries and alexia fries (baked in the oven, no trans fat) yummy meal.

My cousins are so funny

So I'm watching The View and Patty Lupone is on. I don't know anything about her except that her face looks familiar. Apparently she's a big Broadway star. But honestly when I hear Patty Lupone all I can think about is this hilarious blog entry by my cousin Juani.

I'M SORRY BUT SOMEBODY HAD TO SAY IT! WHY IS PATTI LUPONE FAMOUS? It is really rather puzzling. I understand that she was in Evita and was absolutely brilliant, but how is it that every American knows who she is? She has never done televsion, or movies...she hasn't really done much...nothing much besides performing for grandparents in solo concerts at the West Palm Beach Convention Center. The same goes for Chita Rivera, why is she famous? She was a supporting lead in West Side Story and she wasn't even very good. Oh thats right, she was in thirty other shows, but wait none of them lasted for more than a minute on Broadway (including Kander and Ebb's masterpiece: THE RINK, co-starring LIZA MINNELLI and at least we know why she is famous: JUDY GARLAND, need i say more ). And yet we pay thousands to see them in cabaret shows at the Kennedy Center, then we go to to the stagedoor only to have them blow smoke in our faces. It's a shit show. I love them both, but why are they famous?

That was fleating. I actually had a really nice bday.

We went to Bangkok Bangkok (me, ed, mom, dad, marlena, abuela, tio benjamin, michelle, mariquita) and it was fun. something different. Thai food for those of you who don't know. My family never goes to Thai places. Chinese. Thats as exotic as it gets. lol. We had my favorite Thai Iced Tea! yum!


My mom gave me $75 in old navy gift cards. woohoo! i went right home and bought stuff online.


Michelle gave me a $25 american express gift card. :)


And Ed gave me the bestest most bestest gift of all!!!! A Wacom drawing tablet!!!!

its my birthday- and i'm depressed

its my birthday but i just feel like listening to coldplay and crying. i feel like i need a good cry. i've been needing one since friday. the sex and the city movie. i held in a lot of crying. then my sister just gets me to the point where i want to cry because she's so mean and just constantly attacking every little thing.

and my best friend has been really selfish lately. she didn't even remember my birthday. we were on the phone at midnight.

and because ed's been under a stressful deadline the passed two weekends i've hardly spent any time with him. just eating and sleeping. and i've been pretty cool about it this weekend. i don't think i nagged him. but now that its my birthday i'm just starting to break down. because this is the one day i want to feel special. i think everyone should feel special on their birthday. but i just feel like today will be just like any other day because everyone else has other shit on their mind. and its just making me sad. because i don't want my bday to be just another day. thats sad. every single day is just another day. if every day becomes blah then what are we living for?

i just need to feel something. i'm so depressed right now. i'm not sure. but i just want to crawl into bed with all the lights off, listen to crying music, and cry.

i'm sick of being walked all over by people. by my sister, by my friend, by my husband's schedule. i'm just mad. its too much. i'm sick of just shutting up and taking it.
