for the first time in a long time i'm actually thinking of going out and taking the steps needed to change my life. instead of waiting around for things to change for me. the problem is it won't be easy. and i'm very scared that its not the right choice. that i should just try to make it work with the resources i have. or is that just an excuse? for the first time i believe in my abilities. and that with some training i can actually make something of myself. on the one hand i think you have to have some risk but the payoff will be worth it. but on the other hand i think, is this just some new cooky scheme that popped into my head? i can't trust my ideas. i'm always coming up with ideas and hardly ever follow through.
so i need to have a long talk with ed. i trust his judgement.
is this going to put us in more debt? or will this help our family in the long run?

The closest thing to a Kennedy
After last nights democratic convention I woke up just happy and excited about the future. I can only compare it to waking up the day after your wedding day and remembering "i'm married!!!".

my current favorites
1. Avocado/lettuce/tomato/red onion sandwhich on foccacia like bread. *tip* brush the inside of the bread with olive oil and toast it. yummm city. *tip #2* sprinkle some salt on the avocado for taste.
2. Watermelon feta sandwich. watermelon squares with feta and sprinkles of chopped mint. simple and refreshing. i tried this with salad dressing. AWFUL. don't do it. all the flavor you need is in these 3 ingredients. the saltyness of the feta mixed with the sweetness of the melons is divine. the mint adds a little kick to it.
try these. you'll like them.
no pictures. everytime i make these dishes i scarf them down immediately. i'll try to take some next time.

Feeling Puzzled
Ed and I had a great weekend together. We spent some quality time together. We watched the opening ceremony of the olympics, we watched zombie movies, had a late night run to sergios, watched some Californiacation, went to the gym AND worked on a puzzle!
Good times. I much enjoyed it. I could use more weekends like that. Quiet time awake without TVs and computers.
Anyway we're very proud of our masterpiece. Check it.
This is as far as we got sat night/ sunday morning (the sun was up. 8:30am)

Holy garbanzo beans batman!
I've never made garbanzo beans (chickpeas) before. I had bought a can of them but never knew what to do with them. Today I had to get creative for dinner. I looked up some garbanzo recipes but everything called for ingredients i didn't have.
So I decided to Macgyver it. And here's how i did it. I started out by sautéing green peppers in olive oil at a medium low heat then i added some minced garlic. I let them sweat for a while then I drained and added the beans. Then I added some salt and pepper and let it sauté for a while. After a while I added a small can of tomato sauce and brought it to a boil. I added a little olive oil and a little vinegar. I let it boil for a while then when some of the liquid began to boil down I dropped the heat down to low until the beans were tender.
Then I served it on some white rice with a piece of chicken and voila! I was completely surprised to see how good it came out. I mean wow it was really yummy. And it was so different. It seemed healthy. I liked it.
Here's the result.

An open letter to my family
Stop inviting me to things on Sunday. If you have events on Sunday you should fully expect me not to be there.
And if by some grand gesture I decide to grace you with my presence you should feel honored to have any time with me at all.
Do NOT bitch about me leaving early.
Do NOT ask my why I have to leave because you know damn well why. Its the same reason for the past year.
The sooner you accept this the sooner we can move on.

They Never Disappoint
My parents yet again prove that the only way they can be happy and supportive is when I'm either losing weight or I've gotten a new job.
Getting married? Having a baby? No. Shitface no. But did you lose weight? I'm so proud of you. Got a job you hate? Does it pay? Good for you! Maintaining the status quo. We couldn't be happier for you.
